--Pipian de Gallina = chicken

DID you cooked amazing simple mexican rice but you dont know what to put beside it on your table?????

Chicken and beef are the most common meat used in mexican authentic food

SO dont be confused if you invited people to lunch and you promised them for tasting apure authentic mexican dishes

Here's the dish which will make you hungry just for reading the recipe :D

Anyway ,,,,here's our dish

Pipian de Gallina








Ingredients -



**1 whole chicken, simmered until **tender with bay leaf, chili and garlic


**¼ cup masa flour.....
You can buy it masa flour from a Mexican grocery store

**½ lb pumpkin seeds you
can substitute squash seeds for the pumpkin seeds if you want



**1 quart chicken broth (from after you've cooked the chicken)

**2 tablespoons cooking oil

**4 dry red chilies

**2 cloves garlic





Preparation:


this recipe is going to seve about 6 dishes


Brown the flour, seeds, garlic, and chilies in the cooking oil



. Grind this mixture together to make a paste.



Stir in the broth and simmer for five minutes



. Cut the chicken and add the pieces to this broth. Simmer for three more minutes until become thick and serve hot.



I became hungry :( I'm gonna get something to eat

It's easy don't require much time You can make it in just thirty minutes

Ingredients:


  • 1/4 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1 1/2 cups beef broth
  • 1/2 cup chopped onion
  • 1/4 cup chopped green bell peppeR
  • 1 large clove garlic, minced
  • 1 teaspoon chili powder

  • 2 teaspoons canola oil
  • 1 cup long-grain rice
  • 1 can (about fifteen ounces) diced tomatoes with liquid


PROCEDURES :

this recipe is going to serve about six dishes FIRST ,,, In a heavy skillet sauté onion AND green bell pepper ,,, garlic until onion is softened.


then Add rice to skillet and cook over medium-high heat until rice turn into brown colour NOW it's time to Add tomatoes,salt, chili powder, , and beef broth. Bring to a boil; cover, lower the heat, and simmer until liquid been absorbed , about twenty minutes . Taste and add more salt if you need

INGRIDENTS


**
*1/4 cup sliced Green Onion
***Lettuce Leaves

***1 pound Ground Beef or Ground Raw Turkey

***3 cloves Garlic, minced1 (14 ounces) can Dark Red Kidney Beans

***1 (eight ounces) jar Taco Sauce

***1/2 cup sliced pitted Ripe Olives

***one Medium Avocado, seeded, peeled, and sliced (optional)

***1 tablespoon Chili Powder

***two cups chopped Tomatoes

*** two cups shredded Cheddar Cheese (eight ounces)

***one cup chopped Green Sweet Pepper

***Lime Wedges If you like

***Dairy Sour Cream..If you like

AND Salsa or Taco Sauce ....If you like


PROCEDURES



It makes six servings


For meat mixture,...

Iin a large skillet cook beef or turkey and garlic until meat is brown. Drain fat off.


Stir in undrained kidney beans, taco sauce, and chili powder. Bring to boiling; reduce heat. Cover and simmer for ten minutes.

Then , in a large mixing bowl combine tomatoes, cheddar cheese, green pepper, olives, and green onion; add hot meat mixture


. Toss lightly to mix it . then Line six salad plates with lettuce leaves.


Divide salad mixture among plates. If desired, garnish with avocado slices ""very helpful and tasty "and lime wedges, and serve with sour cream and salsa or additional taco sauce.

--SHRIMP SALSA

Continuing to serve appetizer and sauces,salsa's which are the most characterstic thing in mexican hot deliciouse food

NOW
DO YOU LIKE TO CONVERT THIS LITTLE INNOCENT SHRIMP





INTO AVERY DELICOUSE SHRIMP SALSA ?!!






FOLLOW ME .......




Ingredients:

  • 1/2 cup cucumber, peeled, seeded and chopped
  • 1 cup canned corn, drained, sauteed in olive oil
  • 2 Tbs. olive oil
  • 1 avocado, cut into small chunks
  • 1 Tbs fresh lime juice
  • 2/3 cup chipotle roasted salsa, or more to taste. Some like it hot!
  • 1/2 cup cilantro leaves, chopped
  • salt to taste
  • 2 to 3 tomatoes, diced
  • 1/3 cup diced red bell pepper
  • 1 clove garlic, minced
  • 6 - 8 oz. cooked baby shrimp
1/3 cup red onion, chopped


PROCEDURES:


It's easy and doesn't need much time

**Drain the water out from the can of corn. heat the olive oil in a fry pan over medium high heat. Add the corn and saute until corn looks roasted with its brown spots. About 4 minutes. Remove from heat and cool it .

**Chop the tomatoes , bell the pepper, the garlic, cilantro leaves onion, and cucumber and add to a bowl.

**Add the chipotle salsa, shrimp, lime juice and salt and mix very well. Add the corn when it cools and the avocado"" very tasteful ". Mix them slightly

**Taste it to see if you need to add more salt . Refrigerate for about one hour before serving. Makes approximately three cups.

Shrimp salsa can be served with tacos, fajitas or just by itself with may be chips if you like .


YOU WILL LOVE IT ....



This is the perfect Mexican appetizer.

--RED CHILI SAUCE

RED CHILI SAUCE



You can't make a good succesful mexican food without knowing how to make red chili sauce



SO ,.......... Let's start with this sauce which is really




Ingredients


** 3 dried Ancho chiles

** 1 large clove garlic

** 2 whole cloves, crushed

** 2 black peppercorns, crushed

** 1/2 teaspoon of salt or more to taste

** and for your health use Olive oil




PROCEDURES :








***Work on one chile at a time, use a paring knife to cut a slit all the way down one side of the chile.

Open up the chile and remove the stem and seeds. Remove the veins as you can. Reserve a few of the seeds or veins for adding later if you want added heat.




Note: when working with chilies wash your hands very thoroughly with soap and warm water .



**** Heat a large skillet on medium heat. Flatten out the dried chilies and place on the skillet to heat. Press down on the opened chilies and leave for seconds. Turn the chilies over and heat seconds more. You do not need to toast or burn the chilies, just heat them enough to draw out more of the flavor.


***** Add the chilies to a small saucepan and add enough water covering it . Bring to a boil. Remove from heat and let sit for 12 minutes, until the chilies have softened and plumped up.OR pour place the chilies in saucepan and pour boiling water over them to cover. Let sit for 18 minutes, until softened.


*** Reserving the soaking water, remove the chilies from the pan and place in a blender. Add garlic, pepper, ground cloves,salt, and 1 1/2 cups of the soaking liquid. Purée for 2 minutes, until the sauce is smooth. Taste the sauce and adjust the seasoning. If you want more heat..............




add in a few of the seeds or veins . Add more salt if you like .


*** Pour the sauce through a sieve into a skillet. Add a tablespoon of olive oil . Bring to a simmer and reduce heat to maintain the simmer, cook for 12 minutes. Skim off the foam. Remove from heat. you cvan use it now or pour it into a glass jar and refrigerate it .

That Makes a little more than 1 cup.
