--chicken chow mein ...


Chicken Chow Mein





INGRIDENTS :




1 pound of chicken meat.

1 cup of celery.

1 pound of bok choy.

1/2 pound of dry won ton noodles
.

1/2 pound of fresh sliced mushrooms.

1 pound of bean sprouts or snow pea pods.

1 green onion, diced along the diagonal.


1 medium sliced onion.

1 sliced carrot.

1 sliced red pepper.



Seasonings for Chicken:

1 teaspoon of soy
sauce
1 to 2 teaspoons of oyster sauce
salt and pepper to taste
less than 1 teaspoon of cornstarch

the Gravy:


1 tablespoon of cornstarch
1 tablespoon of oyster
sauce
1 teaspoon of soy
sauce
1/2 cup of
water
salt or accent if desired and
pepper to taste.



PROCEDURES:


1-Wash the bean sprouts to give them more time to drain.

Then .... Boil noodles in salted boiling water until they are soft

be careful not to be sticky.

2-Start Breaking the noodles in half if desired so they are easier to manage.

Blanch the noodles in cold water and drain.



3-* Cut the chicken into thin strips. Add seasoning ingredients to chicken, adding cornstarch last.

Marinate chicken in seasonings for 9 to 14 minutes. While chicken is marinating, prepare
vegetables.


4- Cut the bok choy diagonally into 1/2 inch thick slices,and slice mushrooms.

5-Heat the frying pan on high, add 2 tablespoons of oil and fry the noodles in small portions until they are golden. Use chopsticks to separate the noodles as they are frying.


Remove the noodles. Add more
oil and add the meat and onion to the pan.



6-then Stir fry until the meat has no redness. Remove from wok or pan. Cook the rest of the
vegetables separately, adding a bit of salt if desired to taste



7- With the bean sprouts and bok choy add a bit of sugar as well if desired. If desired, add about 1/4 cup of water and cover pan while cooking bok choy, as it doesn't contain much moisture.

8-Give the gravy a quick restir. Add all the ingredients back into the wok, making a well in the middle if the wok for the gravy. Mix it well. Add green onions at this point if desired, or save them for a garnish. Pour on top of the noodles. Garnish with sesame seeds. Serve
hot.

--CHINESE SALAD



CHINESE SALAD



It doesn't require more than two minutes!!!!!!


Ingredients:


**1 oz. Chinese dried mushrooms.

**1 tsp. rice

**2 tsps. Soy sauce

**Pinch of sugar and MSG to taste

**1/2 tsp. sesame oil



PROCEDURES:



1. Wash the mushrooms carefully and soak in 1 cup hot water for 30 minutes. Reserve the water.

2. Cut out the hard stems of the mushrooms, leaving the caps whole. Replace in the reserved water, add the other ingredients and steam for 30 minutes. Leave to go cold before serving

--Spring Rolls


YA It's delicouse as it looks like

If you didn't try it before ,,,,,,, SO you didn't try the chinese food yet

READY for trying it ...??????????



Ingredients:

  • 8 spring roll skins.
  • 2 oz. thinly sliced meat, cut into thin strips

Mixture A:

  • 1 tsp coy sauce and cornstarch
  • 1 tsp Chinese rice sherry
  • A few grain of pepper
  • 2 ½ oz. boiled bamboo shoots, cut into strips
  • 2 cabbage leaves, cut into strips
  • ½ tsp salt
  • Flour-and-water paste
  • Oil for deep frying plus 3 tbsp more oil
  • 2 dried large Chinese mushrooms, soaked in water and drained. Cut into strips.

PROCEDURES:
  1. put the meat and( Mixture A)together . Let sit for about 13 minutes.
  2. Heat about 3 tbsp of the oil in a wok, and stir-fry the meat briefly....... Remove.
  3. Heat the remaining 1 tbsp of oil then add the salt. Stir fry the vegetables, then mix in the meat . Turn off the heat and let the filling cool.
  4. Place some of the filling a little above the center of each spring roll skin. Fold the upper edge over the filling, turn in the two sides, and roll it down to the bottom. Brush the bottom edge with the flour-and-water paste to seal it thoroughly.

  5. Heat the deep-frying oil over moderate heat. Deep-fry the spring rolls until golden.Don't forget to Turn them from time to time .

  6. Serve immediately with table seasonings as you like .
this recipe is going to serve about 4 dishes.

--Flan= creme cramel

I think now it's time for desserts after firing our tongues by the HOT spicy mexican food

the most famouse mexican desserts is " FLAN" or you can call it creme cramel as people know it

I think it's the perfect dessert cooling our BURNED tongues :D





INGRIDENTS:

***1/3 cup of sugar

***1 can of evaporated milk .

*** 1 teaspoonful of vanilla

*** 1/4 cup of sugar

***2 eggs


PROCEDURES:


Heat a 9 inch pie plate of flan pan in a 200 degree oven.

Boil several cups of water in a kettle (used for the bain-marie)

In a heavy sauce pan heat 1/3 cup sugar on medium heat.

Remove the pie plate from the oven and place it near the sugar heating on the stove.

Start stirring the sugar when it begins melting then stir constantly until it turns into a golden brown liquid.

Quickly pour the caramel into the warmed pie plate and tilt the plate to coat the bottom and sides.


You should Work quickly as the sugar hardens within seconds.

Set plate aside.

AND In a medium size bowl add the eggs and the 1/4 cup sugar.


Mix until well blended but not frothy.


Add the milk, vanilla and salt and mix again.

Pour into caramel coated plate.


Place flan into a larger pan such as a roasting pan and put in a 320 degree oven. Add hot water up to 1 - 2 inches up the side of the flan plate.

Bake uncovered for 55 minutes.

Cool and then refrigerate for at least two hours before serving.

Take a sharp knife and cut around the edge of the flan to release it from the dish.

Lay a plate with a lip on top of the custard. Holding both plates tightly together flip them over.


The flan should release into the plate. If the custard needs encouragement shake it gently. It should release.

The caramel sugar topping will flow down the sides of the flan which is why the dish should have a good sized lip.

Slice and serve on individual plates. Top each slice with caramel sauce and garnish with a couple of strawberries.

IT'S the perfect finish to a HOT Mexican dinner.

--Sopapilla Cheesecake



Easy ,,,,, quick ... and deliciouse .....


INGREDIENTS :


* 1 (8 ounce) package cream cheese, softened * 2 (8 ounce) packages refrigerated crescent rolls * 1/2 cup of melted butter * 1/2 cup of white sugar * 1 teaspoon of ground cinnamon
* 1 teaspoon of vanilla extract
* 1 cup of white sugar(((( another one )))



PROCEDURES:

1. Turn an oven to 350 degrees F = about 175 degrees C.Then Prepare a 9 x 13 inch baking dish with cooking spray.


2. Beat the cream cheese with 1 cup of sugar and vanilla extract in a bowl until smooth then ...... set aside.


3. Unroll the cans of crescent roll dough, and use a rolling pin to shape each sheet into 9 x 13 inch rectangles



. Press one sheet into the bottom of a 9 x 13 inch baking dish.



THEN Evenly spread the cream cheese mixture into the baking dish, then cover with the remaining piece of crescent dough, and brush with melted butter. Stir together the other 1/2 cup of sugar with the cinnamon in a small bowl, and sprinkle evenly over the top of the cheesecake.


4. Bake in the heated oven before until the crescent dough has puffed and turned golden brown, about 29 minutes. and Allow to cool about ten minutes before serving it .

--Mexican Fish Stew

I think it's time for "FISH"

this dish is really quick and deliciouse

this recipe is going to serve 4 dishes




INGREDIENTS:

**1 (14.5 ounces) diced tomatoes prefered to be drained .

**1/4 cup of fresh cilantro, chopped, and leaves for garnish

**1 pound of red new potatoes, scrubbed and sliced thin
1lb cod or other firm white fish..

**3/4 cup of frozen corn kernels

**1 chipotle chile in adobo sauceand should be chopped fine OR you can use instead 1 tablespoon ancho paste..

**1/2 teaspoon of ground cumin .

AND **4 tablespoons of Mexican Crema or Greek Yogurt (As you like )



PROCEDURES :

Combine tomatoes, corn, cumin, chopped chipotles or ancho paste and the chopped cilantro in a medium sized bowl. THEN ... Set a side.

Use a 2-quart microwave-safe dish with a lid and combine the potatoes , shallots, with oil and then add salt and pepper

. Spread the potatoes in an even layer ...

Cover then microwave on high for about 6 or 7 minutes.

--Place the fish in a single layer around the edge of the dish atop the potatoes.

Add salt and pepper.

Spoon the tomato mixture in the center. Microwave on high until the fish is cooked through well and until potatoes are tender -- about ten 10 minutes.

Then remove from microwave and mix carefully to combine but be careful don't break up the fish .

Garnish with cilantro and a dollop of Mexican Crema OR deliciouse Greek Yogurt.

--TORTILLA chips



If you are intending to make a mexican food table without using tortilla

I'll tell you something ......... you gonna lose your guests

Using tortilla inside mexican food is one of the bases

Sooooo important to know how to use tortilla ,,,

I suggest salasa chips which is .... easy , quick , tasty salsa


Let's go........

INGRIDENTS :


--White Corn Tortillas

--Corn Oil

-- And Salt


We also need askillet and a cutting board


PROCEDURES :


1- Cut the stack of the tortilla into fourths.

-----you can buy fresh dried tortilla from the grocer's ----


2-the frying step which is very important and characterstic foe mexican chips salsa


Fry the tortillas.


fill the skillet 1/4 of an inchof corn oil.



Place it on a medium high burner to heat up.



Then take tortillas pieces and carefully place them in the hot skillet and let them fry until golden brown on one side then flip them over to cook on the other side



NOW wait until they are golden brown on the other side TOO


NOW remove them from the skillet , place them on top of two paper towels to absorpe the oil ....


****Immediately salt them before the oil drips off.


Because This will make the salt stick.



-Another paper towel to be put on top of the chips you just finished frying..



NOW it's fresh and ready to eat

Well .... If you don't know it or never taste it .......

then you missed alot !!!!

It's my favourite mexican food in this collections ....

Wherever I go I order it .......Even non-mexican restaurant is serving it


DELICIOUSE ......!!




Now........ Let's start quickly


Ingredients
:


5 Cups of Cabbage...
1/2 Cup Green Grapes.
3 Tablespoons Vinegar.
3 Tablespoons Sugar.
1/2 C. Carrot.
4 Heaping Tablespoons Miracle Whip.
1/2 Cup of Golden Raisins.




PROCEDURES :

1-
Shred 5 cups of cabbage.


2-
Shred 1/2 cup of carrots, cut your grapes in half and get your raisons out.

Put this all in a bowl for the 4th step.


3-
In a bowl put together :


3 Tablespoons Vinegar
And
4 Heaping Tablespoons Miracle Whip
then add
3 Tablespoons Sugar




4-T
ake your salad and dressing and mix them ALL together well until every thing is well distributed and homogenous



5- That's It ......

I swear you will love it......

That's how it will look like at the end
